The Chilli

2 cans black bean soup
1 can tomato soup
1 can of corn
1 can of red or pink kidney beans
1 packet of taco seasoning
1 lb. ground beef, cooked
1 medium onion, chopped
1 green pepper, chopped

prepare on the side:
cheddar cheese- to taste
sour cream- to taste
corn chips- lots of them

Put all ingredients in the top list into a crock pot and cook for 6-8 hours on high. Serve with sour cream and shredded cheddar cheese on top. Works best eaten with corn chips in place of a spoon. If you're feeling crazy, toss together some cornbread as well. Email me if you need a good GF cornbread recipe (liz_a_fuller@hotmail.com).

Chicken Lettuce Wraps




4 chicken breasts (thinly chopped and cooked)
1 T ginger root
2 T oil
2 T rice vinegar
2 T terriyaki sauce*
1 T honey
1 & 1/2 C shredded carrot
1/2 C green onion
1/3 C sliced almonds
Lettuce

Add all ingredients except chicken into a bowl and stir until combined. Then put mixture into pan with cooked chicken and simmer for 8 minutes. Serve hot with prepared lettuce leaves. Fill leaves with mix and enjoy. Tastes best when the Red Socks are winning.

*GF soy sauce can be substituted. To make GF terriyaki sauce out of the GF soy sauce: stir in sugar, honey, and ginger to taste.

Apple Butter

Fill crock pot 2/3 full with peeled and chopped apples.
Cook on low 6-8hours.
Add:2 cups sugar, 1 tsp cloves, 2 tsp cinnamon. I also like to add a shake of nutmeg and ginger
Stir and mash (depending on your desired consistency, we like it more chunky- so we don't mash as much). Cook 30 minutes more.

Beef and Noodles with Fresh Veggies



Beef and Noodles with Fresh Veggies
1/4 cup italian dressing
1/4 cup soy sauce*
1lb. lean boneless beef sirloin steak, cut into strips
2 cloves of garlic, minced
2 cups sugar snap peas, halved
1 yellow pepper, cut into strips
1 tomato, chopped
1/2 cup chopped parsley
12 oz. thin spaghetti, cooked, drained*

Mix: dressing and soy sauce

Heat: Skilled to med-high. Add steak strips, garlic, 2 Tbsp. dressing mix: cook 3 minutes and set aside (or until steak is barely pink in the middle).

Add: peas, yellow pepper, and remaining dressing mix into skillet; cook and stir 3 minutes. Return steak to skillet, stir-fry for 1 minute. Remove from heat and stir in tomatoe and parsley. Serve over hot cooked pasta.

*GF substitutions available at Trader Joe's, Mrs. Green's, Whole Foods, Natural Village
**Personal Review: As big chicken fans, it was nice to have red meat for a change (aside from taco night) and the sauce made for a unique flavor.
The GF brown rice pasta worked out well. Next time I will include a red pepper , too.
